Thank yall so much for all of the encouraging & motivating words from Sunday's post!
Although I have a million cookbooks in my cabinet, I tend to keep going back to Pinterest. I do need to step away from the computer sometimes & go back to the delicious, home cooked meals that are the books - but without Pinterest, I wouldn't have made these two yummies last night!
Banana Oatmeal Cups
Ingredients:
3 mashed bananas
1 cup vanilla Almond milk
2 eggs
1 tbsp baking powder
3 cups old fashioned oats
1 tsp vanilla
3 tbsp mini chocolate chips (I had the regular size)
Preheat oven to 375 degrees. Mix everything together, except the chocolate chips. Spray your pan/liners. Stir the chocolate chips into the mixture. Now pour evenly into each muffin cups! The original recipe said that it would make 15. Of course (somehow), I ended up making a few more than the recipe said, ha! Not sure how that always happens!
one oatmeal cup = 115 calories!
Skinny Chocolate Chip Cookies
Ingredients:
2 tbsp salted butter, softened
2 tsp vegetable oil
1/2 cup packed dark brown sugar
1 tsp vanilla
1/8 tsp salt
1 large egg white
3/4 cup all-purpose flour
1/4 tsp baking soda
1/2 cup semi-sweet chocolate chips
Preheat oven to 375 degrees (or you can just do like I did & leave it on from your other baking frenzy, ha!). Cream together butter, vegetable oil, & brown sugar. Add the vanilla, salt, & egg white. Mix to combine! In a separate bowl, mix together the flour and baking soda. Combine everything & mix, then mix in the chocolate chips real good.
Drop 1/2 tsp of dough onto non stick baking sheet. I had to use two. Leave a small amount of space in between each one. Bake for 4-6 minutes, & then let cool on cooling rack!
one cookie = 30 calories!
Easy peezy, lemon squeezy.

I've been working my booty off with workouts, trying to tone up but I know that won't happen if I keep eating junk food. 30 calories per chocolate chip cookie... yes please! Do they taste like typical CC cookies?

I will try the chocolate chip cookies recipe. Thanks for sharing it. I've come across other recipes for them on the Internet, and you'd be surprised at how ridiculously complicated some of them are.
I have actually gotten rid of a lot of cookbooks! They take up space and you can find every recipe online. These look yummy!
