I saw this recipe for healthy personal sized baked oatmeal floating around on Pinterest & thought I would give it a try this past weekend! The recipe said that it would make 18, but that it definetly not how many I got! I ended up making 34 out of this recipe, ha! Next time I make cut, I'll cut it in half!
2 eggs
1 tsp vanilla
2 cups applesauce, unsweetened
1 banana, mashed
1/2 cup honey (I had fresh, homemade honey at home!)
5 cups Old Fashioned rolled oats
1/4 cup flaxseed meal
1 tbsp cinnamon
3 tsp baking powder
1 tsp salt
2 3/4 milk
I put chocolate chips & peanut butter chips on top, but you could put raisins, nuts, whatever on top! The lady who originally created this, said you could mix fresh fruit in the mixture if you would like it, not on top.
Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana, and honey together.
Add in the oats, flax, cinnamon, baking powder, salt, and mix well with wet ingredients.
Finally pour in milk and combine.
The original recipe said to then spray a 12 and 6 capacity muffin tin with cooking spray. Needless to say, I had to do more than that, ha! I sprayed the pan, placed cupcake liners in, then sprayed them before pouring the mixture in.
Then add toppings on top.Bake for 30 minutes, until a toothpick in center comes out clean!
We love them!
I also made No Bake Energy Bars
and a green monster smoothie! Yum!

Yum! I made oatmeal cups once but never thought of including peanut butter chips too! I might have to try these.
I want to try the baked oatmeal! I had a friend make it for us and it was sooo yum!
YUM! How have I not seen these before? Definitely making them! I wonder if they'd freeze well?
