third time's a charm (kinda)

A while back I saw a recipe on Pinterest for Crunchwrap Supreme's, like the ones you can get at Taco Bell. I have always loved those things!  Like so much that Casey & I used to dig up change in high school, just to get one.  For real.  Ha!

Ingredients:
6 large flour tortillas
6 small corn tortillas
1 pound ground beef (I used ground turkey)
1 package taco seasoning
Taco Bell taco sauce 
sour cream
diced onion
shredded cheddar cheese
shredded lettuce
diced tomatoes
butter

Preheat the oven to 400 degrees.  Brown the meat & then put the taco seasoning it.  Set aside.
Place the small corn tortillas on a cookie sheet in the oven for a few minutes, until golden brown/crispy.
Take out the flour tortillas & spread 4-5 tbsp of the seasoned meat into the center of each one.  Sprinkle with some shredded cheese, then microwave the tortilla with meat/cheese mixture for 20 seconds.  Drizzle the taco sauce onto the meat/cheese.
Place the crunchy corn tortilla on top of the meat, spread the sour cream, & then add the toppings.
Fold the edge of the bottom tortilla towards the center of the crunchy corn tortilla.  Keep doing this around until it's all folded.  If everything didn't get covered, you could tear a piece of another flour tortilla & place in the center & rewrap.
Place a small amount of the butter into a frying pan.  Here's the tricky part - gently place the crunchwrap in the pan, with the seams facing downwards.  Press down, then flip.  It should be cooked on medium, each side for a few minutes.

I didn't have any large flour tortillas, just the medium size.  The large would have def been a lot easier to fold!  Which is why it probably took me three times to get it to look decent, ha!  No matter what it looked like, it tasted really good!  B doesn't eat sour cream or tomatoes, so I'm sure his tasted a little boring, but he said it was good!  I didn't have an onion on hand to use either.  We added a side of chips & salsa to go along with it!

yummy in my tummy

Let me introduce to you the first bread that I have ever made!

Ingredients

2 (ripe) bananas
1 apple, peeled & diced
2/3 cup sugar (I used Truvia)
1 3/4 cups whole wheat flour
1/2 cup applesauce
1 tsp baking soda
1 tsp salt

*I did add a little bit of cinnamon, next time I will add a little more!

Preheat oven to 350°F. Lightly spray a 9" loaf pan.  In a medium sized bowl, mash the bananas with a fork!  Add the rest of the ingredients & mix well. Pour into the greased pan & bake for 45-60 minutes or until a toothpick inserted in the middle comes out dry.  Cool in pan for 15 minutes and then transfer to a cooling rack.  Then devour the warm yumminess.

Not going to lie, I was kind of nervous making this!  It was my first bread, & I was afraid it was going to be dry - which it def wasn't!  B loved it too!  Scott loved it even more than we did, ha!  It was so good warm!

boogity boogity boogity! let's go racing boys!

Thank yall SO much for your kind & encouraging words on Friday's post!  Means so much!

Late Friday night, our friend Ericha called us to see what we were going to be doing on Saturday evening.  Her boyfriend & BIL are both in the military.  They had free tickets to go to the Allstar race in Charlotte & had a couple back out & invited us to go!  Free tickets, yall!  I was so excited that she asked us to go!  B had been to Nascar races before, but I hadn't.  I was super excited!

It rained all day Saturday, but before we made it to the race it stopped!  We ended up finding free parking!  Brittany's dad was actually camping there, so B & I went & visited with him & his friends for a little bit before the race.  They had just grilled out some BBQ-ed chicken, that we ate as well.

Ericha & I agreed that we should start a People of Nascar website, like the People of Wal-Mart.  I think that might have been the best part of the race, ha!

The race was broken down into four 20 lap segments, then finished up with 10 laps!  Towards the end, there was a small rain delay, where B & I almost fell asleep, ha!  Jimmie Johnson ending up winning.  Cutie Kasey Kahne was close though!  Guess how much money ole Jimmie won!  A million dollars!  What I could do with a million dollars...

We ended up getting home around 3am.  We are def not used to staying up that late anymore, ha!  We missed Sunday School because we were so wore out but made it for preaching.  The rain greeted us again yesterday, so that helped when we decided to take a two hour nap!

weigh in!

The last time I did a weigh in was way back in March, right before our cruise.  I think it is time to update what has been going on!  At that point, I had lost 15 pounds.  During the cruise, we ate a lot (hello, you can't help it!) but we walked a lot too.  I had been used to watching how much I ate, so I tried to not make it any different on our vacation.  Of course, I devoured yummy desserts each night & had a few ice cream cones throughout the week.  When I found out there was a pasta bar (thanks to Bethany's mom), I was then in Heaven.  Seriously, I think Jesus is going to have some awesome pasta decisions that we can eat in Heaven one day.  That Monday morning after our 100 day cruise, I closed my eyes & climbed on the scale.  Yall.  I had only gained TWO pounds during that week!  I was very proud of myself! I knew if I could get through that, I can do it forever.

Since then, it hasn't always been easy.  When I finally (for what seemed like forever) reached 132 a few weeks ago, my weight would then fluctuate back & forth.  It would go from 132 to 134, then 133, then back to 132...annoying.  I think my body was/is starting to get used to the change more, so I need to keep working hard at it!

This week I stayed at 132 for 3 days, then I finally hit 131 Tuesday (I think)!  Yippee!  Yall, that's TWENTY POUNDS DOWN!  I have been at 131 for four days now.  Yay, for not going up!

I think that deserves a cupcake!  Kidding.  Kinda . . . ;) You can treat yourselves occasionally, people!

Beginning / Now

I see myself everyday, but I don't necessarily see all the changes.  MY FACE.  Holy heck.  Good bye, chubby wubby!  B is constantly complimenting me, not that he didn't before because he did!  It motivates me even more!  I have lost some weight in my butt, which kind of sucks but that is A-OKAY with me! :)  It's so nice being able to fit in old jeans, that I've been saving for years, hoping I could fit into them again one day.

I still do Zumba 3 times a week.  On days that I don't, I will either do crunches on my Ab Lounge, an exercise that our Zumba instructor may challenge us to do for that day, or an exercise that I found off of Pinterest.

I want to lose maybe five more pounds, at least get in the mid-upper 120 range, then start toning up more.  I really want to tone my stomach & arms!

Hubby's goal was to lose his stomach fat & gain more muscle.  I can tell that his stomach is getting smaller/flatter & his shoulders/arms are getting a lot bigger!  Looking good, babe ;)  He works out 5-6 times a week & each day he focuses on a different part of his body.  Some days he will spend more time running too.

You can really tell a difference in his whole upper body now!
